Pizzelle with Mini Chocolate Chips
Pizzelle - made with vegetable oil
Makes 2-3 dozen depending on the size of the pizzelle maker
The vegetable oil will make them thin and crisp.
Ingredients:
1 cup sugar
1/2 cup vegetable oil
3 eggs, room temperature
1/2 teaspoon salt
1 tablespoon grated orange zest
1-1/2 teaspoons extract (lemon, rum, almond, vanilla, or anise)
3-1/4 cups all-purpose flour
Directions:
In a large bowl, beat together the sugar and oil. Add the eggs, salt, zest, and extract. Beat well. Gradually stir in the flour until the mixture is smooth. It will be very soft and sticky.
Heat the pizzelle maker according to the manufacturer's instructions. Wet your hands. Take a scoop of dough the size of a walnut and roll between your hands to form a ball. Or you can use a spoon to place the dough on the pizzelle baker. Place the dough on the pizzelle surface. Close and clamp the lid and cook until golden brown, about 30 seconds. Transfer pizzelles to paper towels to cool. Repeat with remaining dough.

Pizzelle - made with butter
Makes 2-3 dozen depending on the size of the pizzelle maker
The butter will make them more flavorful than those made with oil.
Ingredients:
3 eggs, room temperature
3/4 cup sugar
1/2 cup unsalted butter, melted and cooled
1 teaspoon vanilla
1 teaspoon triple sec (you can substitute another liqueur or extract)
1-3/4 cups flour
2 teaspoons baking powder
Directions:
In a large bowl, beat together the eggs and sugar. Add the butter, vanilla, and triple sec. Add the flour and baking powder and mix well. The batter should be stiff enough to be dropped by spoon. The batter can also be refrigerated for later use.

Chocolate Pizzelle
(Makes about 30)
Ingredients:
2 cups flour
1 teaspoon baking powder
1/2 cup unsweetened cocoa powder
1/2 cup unsalted butter, melted and cooled
1 cup sugar
3 eggs, room temperature
1/2 cup milk
1/2 teaspoon vanilla
Directions:
Sift the flour, baking powder, and cocoa together in a bowl. In another bowl, whisk together the butter and sugar. Add the eggs, milk, and vanilla. Whisk until combined. Add the flour mixture and blend until smooth.
Heat the pizzelle baker and follow the directions for How to Make a Pizzelle.

Pizzelle with Hazelnuts
Ingredients:
4 eggs, room temperature
1 cup sugar
1/4 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2 cups flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon cinnamon
1 tablespoon baking powder
3/4 cup ground hazelnuts
Directions:
In a bowl, whisk together the eggs, sugar, and salt. Add the butter and stir in.
Sift together all the remaining ingredients, except the hazelnuts. Stir the flour mixture into the egg mixture. Fold in the ground hazelnuts.
Heat the pizzelle baker and follow the directions for How to Make a Pizzelle.

Almond Pizzelle
Follow the recipe for Pizzelles made with butter.
Omit the vanilla and triple sec flavorings.
Add 1 tablespoon of almond extract or 2 tablespoons of amaretto.
Add 3/4 cup of ground almonds to the batter.
Cappuccino Pizzelle
Follow the recipe for Pizzelles made with butter.
Omit the vanilla and triple sec flavorings.
Add:
2 teaspoons instant espresso powder
2 teaspoons cinnamon
2 tablespoons coffee liqueur
Optional: Serve with whipped cream and shaved chocolate
Black and White Pizzelle
Make one batch of the Pizzelles made with butter recipe.
Make one batch of the Chocolate Pizzelle recipe.
Place 1/2 tablespoon of each together on the pizzelle grid and bake as
directed.
Bake the pizzelles or pastries before putting on cone. Make sure they are cooked but still flexible. Let cool and dry, remove and fill with whipped cream, pastry cream, ice cream, and more!

ENJOY DELICIOUS HOMEMADE PIZZELLE
Pizzelle are known as ferratelle in the Lazio region of Italy. In Molise they may be called ferratelle, cancelle, or pizzelle. The cookie dough or batter is put into a pizzelle iron. The iron stamps a snowflake pattern onto both sides of the thin golden-brown cookie, which has a crisp texture once it is cooled.
