Chocolate and Peanut Butter Meltaways

(Makes about 48)

1 (12-ounce) package white chocolate baking chips
1 cup (6 ounces) semi-sweet chocolate chips
1 cup creamy peanut butter
2 tablespoons coconut oil
48 miniature baking liners or candy cups
Assorted decorations, frosting, icing, etc. (optional)


Combine white chips, chocolate chips, peanut butter and coconut oil in a microwave-safe bowl. (If you have a microwavable mixing bowl with a pouring spout or a glass measuring cup, use that  instead of a bowl, because it will make it easier to fill the cups).  Cover and microwave on HIGH for 1 1/2 minutes. Remove from microwave and stir. Then return to microwave and cook an additional 30 seconds on high; remove and stir until mixture is smooth.

Arrange the mini baking liners or candy cups on a 10×15-inch baking sheet.  Pour the melted chocolate mixture into the liners, filling until almost full.
Place the sheet of filled liners into your refrigerator and chill until set, about 1 hour. After they’re set, you can decorate them as you desire.  If you’re not serving these right away, keep them stored in refrigerator until ready to serve.

To decorate the candies:
You can make little star shapes with a pastry tube of royal icing.  You can also use small pre-made candy decorations (I chose some candy canes). To get the decorations to stick, re-melt a little of the meltaway mixture (if you have any left) or some additional chocolate and brush a tiny bit on the back of the candy decorations and place on top of the meltaways. The chocolate will work as a “glue” to stick the little shapes onto your candies.
