When the Recipe Calls for Softened Butter
When a cookie recipe calls for using softened butter, it's for a good reason. Room temperature butter allows small pockets of air to get trapped when creaming it with sugar. This leavens the cookies and makes them fluffy. If you use butter that's too soft, on the verge of melting, it can do the opposite and actually prevent air from getting trapped. The ideal softness level is when you're able to press your finger into the butter without any resistance.

Pie Plates: Glass vs. Metal
Use glass pie plates for most pies; they disperse heat well for even browning. Because they are clear, you can check the bottom of the crust to ensure it's thoroughly baked before you take it out of the oven. If you have aluminum pie plates, use them for icebox pies with press-in crusts or those that are baked briefly in the oven.
