Parmesan Cream Gnocchi with Brussels Sprouts and Mushrooms

(Serves 3-4 as an appetizer or 2 as an entree)
In this easy skillet dinner, soft pillows of gnocchi are combined with Brussels sprouts and mushrooms in a creamy Parmesan sauce that is ready in less than 15 minutes. Essential to this dish is the Truffle Essense (Truffle Zest) that is dusted over the gnocchi before serving. The dusting of the Truffle Zest tranforms an everyday dish into a gourmet meal that will delight your taste buds.

Fresh gnocchi can be made from scratch or you can also use store-bought gnocchi.  For this recipe, I used packaged Rana brand Skillet Gnocchi.  For the skillet gnocchi, you don’t have to boil them before cooking; they will be cooking in the sauce.  I would not recommend making this recipe with dried gnocchi.

Ingredients:

12 to 16 ounces fresh cooked or skillet gnocchi
4 tablespoons unsalted butter, divided
6 large Brussels sprouts, trimmed and very thinly sliced
6 large mushrooms, thinly sliced
Salt and pepper
1 large garlic clove, minced
1/2 cup heavy cream
1/2 cup chicken broth
3 tablespoons grated Parmesan cheese
Truffle Essence (Zest), for dusting

Directions:

In a large skillet over medium-high heat, melt 2 tablespoons of butter.  Add the Brussels sprouts and mushrooms, saute for 3-4 minutes or until the mushrooms are just starting to brown.  Season with salt and pepper and add the garlic.  Saute for another minute and then transfer the mixture to a bowl.  Wipe out the skillet with a paper towel. 

Add the remaining 2 tablespoons of butter to the skillet and allow it to melt.  Add the heavy cream and chicken broth.  Stir in the Parmesan cheese. Bring the sauce to a simmer and allow it to cook for 2-3 minutes or until it begins to thicken. 

Add the gnocchi to the sauce along with the Brussels sprouts and mushrooms.  Continue cooking for 2-3 minutes until the sauce is reduced and coating the gnocchi.  Season with a generous amount of black pepper.  Transfer the mixture to a serving bowl.  Dust the gnocchi liberally (or to taste) with the Truffle Essence.  Serve.
