Almond Flour Banana Bread
(Makes 1 loaf)
1/2 cup honey
1/4 cup plain Greek yogurt
3 ripe bananas, mashed
1 teaspoon vanilla extract
1-1/2 cups almond flour
1-1/2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup chopped walnuts
1/4 cup mini chocolate chips (optional)
Preheat the oven to 350 degrees F. Grease a 9 x 5-inch loaf pan with butter or coconut oil.
In a medium bowl, whisk together the eggs, honey, yogurt, mashed bananas and vanilla.
In a large bowl, mix together the almond flour, cinnamon, salt and baking soda.
Stir the egg mixture into the dry ingredients until well combined.
Stir in the walnuts and optional chocolate chips.
Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Transfer to a wire rack to cool for 10 minutes. Run a sharp knife around the perimeter of the pan and then invert the pan to release the bread.
