Italian taralli can be either sweet or savory. Sweet taralli are very simple cookies with a
lemon glaze and topped with colored candy sprinkles. Cookies that are very similar to
Sweet Taralli are Love Knot Cookies which are twisted into a knot and have a softer texture.
6 tablespoons unsalted butter
2-1/2 cups flour
1 tablespoon baking powder
1/2 cup sugar
1 tablespoon vanilla extract
1-1/2 cups confectioners' sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
2-3 tablespoons water
Multi-color candy sprinkles
Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
Melt the butter and set it aside to cool.
In a bowl, combine the flour and baking powder; set aside. In another bowl,
whisk the eggs with the sugar and vanilla extract. Add the cooled butter and
whisk to combine. Fold in the flour mixture until the dough comes together.
Transfer the dough to a lightly floured surface; knead lightly to form a smooth
dough. Divide the dough in half. Form each piece into a log about 15-inches
long x 1-inch wide. Cut the log into 1-inch pieces; roll each piece until it is
about 5-inches long. Bring the two ends together into a circle and pinch the
ends to hold together. Place the dough circles on the prepared cookie sheets.
Bake for 15 minutes; the taralli will be puffed but will remain pale on top.
Transfer the cookies to a wire rack to cool.
To make the icing:
Combine the confectioners' sugar, lemon juice, and vanilla in a bowl. Add the
water a little at a time until the icing is thin and spreadable. Dip the tops of the
cooled cookies in the icing. Dust the tops with the candy sprinkles while the
icing is still moist.
