Portabello Mushroom Burgers
(Serves 4)
4 Portabello mushrooms
1/3 cup olive oil
2 garlic cloves, minced
Dressing:
1/2 cup mayonnaise
2 tablespoons chopped fresh basil
1 tablespoon Dijon mustard
1/2 teaspoon lemon juice
Salt and pepper
4 crusty rolls
Shredded lettuce and sliced tomatoes
Heat charcoal fire, gas grill, or stovetop grill.
Remove the stems from the mushrooms and clean them to remove excess dirt.
Combine the olive oil and garlic. Brush the mixture over both sides of the mushrooms.
Place the mushrooms on the grill and cook, turning once, until dark brown and slightly soft to the touch,
about 5 minutes per side.
In a small bowl, combine all of the dressing ingredients.
To serve, place each mushroom on a crusty roll topped with some shredded lettuce, a slice of tomato,
and a dollap of the dressing.
