SCAMORZA
WITH ARUGULA AND ORANGES
(Serves 4)
2 large oranges
1 cup arugula
1 tablespoon fresh basil, julienned
1 tablespoon extra-virgin olive oil
8 ounces Scamorza cheese
4 slices raisin or nut bread
Peel the oranges and cut into sections.
Place the oranges sections in a bowl.
Squeeze the juice remaining in the membranes over the sections.
Add the arugula, basil, and olive oil.
Toss well.
Cut the cheese into 4 equal slices.
Place one slice on each of 4 serving plates.
Top with a portion of the salad.
Serve with a slice of bread.
