CROTONESE CHEESE PUFFS
(Makes about 16)
1/4 cup milk
1 tablespoon butter
1/2 cup flour
1/4 teaspoon salt
2 eggs
1/3 cup grated Crotonese cheese
Vegetable oil for frying
Additional grated Crotonese for dusting
Dipping Sauces:
Traditional tomato sauce
Equal parts mayonnaise and Dijon mustard
Place milk and butter in a small saucepan.
Bring to a boil.
Add flour and salt and stir over low heat 1 minute to blend.
Remove from heat.
Beat in eggs, one at a time.
Stir in cheese.
In a shallow saucepan, add 1-inch of oil and heat.
Drop the batter by tablespoons into the hot oil.
Fry until both sides are golden brown, about 1-2 minutes.
Transfer cheese puffs to a paper-towel lined plate to drain.
Sprinkle with additional grated cheese.
Serve warm with one or both of the suggested dipping sauces.
