Bel Paese
with Spicy Tomato Sauce
SAUCE:
2 teaspoons red pepper flakes
1/3 cup olive oil
2 cups peeled, seeded, and finely chopped plum tomatoes
1/2 cup tomato puree
1/4 cup red wine vinegar
Pinch of sugar
Salt and pepper
8 rounds or slices Bel Paese cheese
Baby salad greens, dressed with oil and vinegar
8 slices Italian bread, toasted or grilled
To make the sauce:
In a small saucepan, heat the pepper flakes and olive oil.
Stir for 1-2 minutes.
Add tomatoes, puree, vinegar, and sugar.
Bring the sauce to a simmer.
Cook over low heat until thickened, about 20 minutes.
Season with salt and pepper.
Cool completely.
Arrange the salad greens on individual serving plates.
Top with Bel Paese cheese. Spoon sauce over cheese.
Serve with a slice of bread on each plate.
